Pad Prik King Chicken
Pad prik king is a common dish found in Thai Restaurants in the U.S. It is a stir-fry dish consisting of red curry paste, green beans, lime leaves, and meat. In Thai, the word “king” in pad prik king translates to ginger; but interestingly enough, there is no ginger in the dish!!
This is one of the easiest Thai recipes to make, and it does not require too many ingredients or much time to make. I can cook this dish in 30 minutes or less! For this recipe, I used Mae Ploy Red Curry Paste. Just be aware that if you use a different red curry paste brand, the spiciness and saltiness level will vary. When cooking this dish, make sure to taste and adjust the ingredients accordingly!

DIRECTIONS
Take 2 chicken thighs and cut into bite size pieces!
Next, cut green beans 1/4 inch or 1/2 inch long. The length of the green beans in most pad prik king dishes are about 2 inches long, but I prefer them shorter. The shorter they are, the better they absorb the flavor of the red curry paste. Also, I love to use thin French green beans for this recipe. Chinese long beans will work as well!
Cut lime leaves into thin strips. I use kitchen scissors to thinly cut the leaves. First cut the center stem and move on to cutting the leaves.
On medium heat, add a tablespoon of cooking oil in a pan. When the pan is heated, add the red curry paste. Secondly, add the sugar and fish sauce. Mix everything together.
Next, add the chicken and stir-fry the red curry paste into the chicken. Cook the chicken for about 5 minutes and add in the green beans and lime leaves. Stir-fry everything together. Cook the chicken completely through and your dish is done!

- 1 tbsp cooking oil
- 1/3 cup French green beans or Chinese long beans
- 1 tbsp red curry paste
- 1 tbsp sugar
- 1 tsp fish sauce
- 2 chicken thighs
- 4 lime leaves
Instructions

Cut chicken thighs into bite size pieces.

Cut green beans 1/4 inch to 1/2 inch long. Next, cut lime leaves into thin strips using kitchen scissors. Remove center stem from the lime leaf.
