Pad Macaroni Recipe
Pad Macaroni or Thai Stir Fry Macaroni is a Thai pasta dish with a hint of western influence. The addition of Sriracha hot sauce gives the dish a Thai flavor. Of course you need to spice up a Thai dish with hot sauce!! When I lived in Thailand for a short period, Pad Macaroni was one of my favorite dishes to order. Pad See Ew overshadows this amazing dish!
Pad Macaroni is not commonly served at Thai restaurants in the U.S. so I decided to learn how to make it. My mom also made this dish while I was growing up so I had an idea of how I would cook this dish. The main ingredients for the sauce are ketchup, oyster sauce, soy sauce, sriracha and tomato sauce. I know it might sound strange to add ketchup to pasta, but the ketchup creates a tangy and sweet taste. Make sure to use good quality ketchup and not the Del Monte Brand Ketchup. If you use the wrong brand of ketchup, the dish might not turn out well.
Sometimes when I’m in the mood, I will add cut tomatoes for a little more texture. I know not everyone likes spicy so you can actually leave the Sriracha sauce out, but I suggest putting just a squeeze or 1 teaspoon in there if you don’t want it too spicy. Make sure to taste it first before you add more Sriracha sauce for a spicier taste.
Feel free to add protein to the dish since I did not add it to the ingredients list. After you finish cooking the dish, let it cool down so the macaroni absorbs the sauces. Don’t forget to add lettuce or cucumbers on the side to eat with the dish!! We all need to eat our veggies too!
Pad Macaroni Recipe
Ingredients
- 1 tsp oil
- 3 servings macaroni
- 1 egg
- 1/4 inch onion slice
- 1/2 carrot sliced
- 1/2 cup tomato sauce
- 1/2 cup ketchup
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sriracha sauce
Instructions

Boil 3 servings of macaroni in a pot. Check package directions for macaroni cook time. After the macaroni is cooked, drain and rinse with cold tap water. Set aside.

In a bowl, add the ketchup, tomato sauce, oyster sauce, sriracha, and soy sauce. Then mix the sauces together.

Cut half a carrot and thinly slice them.

Slice ¼ inch of an onion lengthwise and mince

Heat pan to medium heat and add oil to the pan. Wait for the pan to heat for a few minutes and add the carrots and onions. Stir fry carrots and onions for 2 to 3 minutes or when the onions become fragrant.

Add macaroni to the pan and pour the sauce mix over the pasta. Mix and stir well.

Move the macaroni to one side of the pan to make space for the egg. Crack the egg in the pan and scramble. After the egg is cooked, mix it in with the macaroni. Stir-fry for a few more minutes.

Turn off heat and remove the pan from the stove to let it cool.

Once it has cooled, it’s ready to serve!!!
