Lactose Free Bread Pudding

Let’s make some lactose free bread pudding! My first experience eating bread pudding was from a Japanese BBQ restaurant called Gyu Kaku. It was interesting that bread pudding was served at a Japanese restaurant.  I was hesitant to eat the bread pudding because I had never eaten them. Lo and Behold, the bread pudding dessert was AMAZING. It was not like the usual baked bread pudding; it was a beautifully fried and a dark golden brown bread in the shape of little square cubes that were dusted with powdered sugar. As you take a bite into the bread pudding, you feel the crunch of the crispy surface and the softness of the interior. It was just sweet and delectable.

Of course I had to re-create this wonderful experience by making my own bread pudding! I know the bread pudding tasted so wonderful fried, but I wanted to make bread pudding the old fashion way by baking it. To tell you the truth, I am afraid of frying things that’s why I decided to bake the bread pudding. I’ve fried food, but frying things still scares me. The image of grease fires always pop in my head. Maybe one day I’ll try  frying them. Since bread pudding doesn’t require frying, I thought I’ll just stick to baking it.

For this recipe, I added about 1 teaspoon of cinnamon. Some people may or may not like cinnamon, so go easy on the cinnamon. Also feel free to add an extra cup of lactose free milk or just a little over 2 cups of lactose free milk. This recipe is really flexible, but do not lower the amount of eggs and milk indicated on the recipe. The milk and eggs help to create that fluffy and soft custard for the bread pudding. If you’re wondering what bread I used, I used Sara Lee Artesano Bread. I like this bread because it is soft, yet firm. The bread does not break apart easily and it absorbs the mixture well. Recommendations for butter is the Green Valley Organics Lactose Free Butter. Substitute the butter for Blue Bonnet lactose free margarine.

Ingredients

  • 6 slices bread
  • 2 cups lactose free milk
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 cup sugar
  • 2 tbsp lactose free butter or margarine
  • pinch of salt

Instructions

  1. Take 6 slices of bread and cut them into cubes. Toast the bread cubes for 5 minutes

  2. In a pot, add the milk, vanilla extract, cinnamon, sugar, butter and salt. Heat the ingredients and mix until the butter has melted. Once the mixture has cooled, beat the eggs and add it to the mixture

  3. Place toasted bread into a baking dish or pan and pour mixture over the bread. Refrigerate for 2 to 3 hours or overnight. 

  4. Remove the baking pan or dish from the refrigerator and bake for 350 F for 45 minutes. 

  5. Sprinkle sugar on top and enjoy!
