Kona Coffee Cookies Recipe
I’m so excited to share my Kona Coffee Cookies Recipe. One of the first things I learned to bake was chocolate chip cookies. They are simple to bake and easy for first timers.
My Cookie Baking Mishaps
Although they may be simple, I had a few chocolate chip baking fails. Let me tell you some of them before we get into the recipe. One time I was a bit absent-minded and put a little too much baking soda in my cookies. While they were baking in the oven, my cookies started to bubble and foam. Unfortunately, I had to toss out the dough and those cookies. I felt bad for wasting food, but I’m glad it happened because this experience has reminded me not to go overboard with the baking soda. My friends were there when it happened and they still remember this mishap until this day.
My most common cookie fail is putting too much dough for one cookie on the baking pan. You know what happens when you use too much cookie dough for one cookie… It ends up being one large cookie on the baking pan. I never had an ice cream scooper to measure out how much dough I needed for one cookie so I ended up putting too much. Finally, I figured out that a 1 tablespoon measuring spoon is the best size to scoop out the cookie dough.
In between the humps and bumps of my chocolate chip cookie journey, I did learn how to make my recipe tasty and special. How, you may ask? I add instant coffee grinds into the cookie dough. After experimenting with the addition of coffee grinds, I really liked it and that’s how I came up with my coffee chocolate chip cookie recipe.
Why Kona Coffee?
While living in Hawaii, I was introduced to Kona Coffee. Kona coffee is a variety of coffee beans grown in the Kona District of Big Island, Hawaii. Kona coffee is one of most expensive coffees in the world and is known for its quality and excellence.
Before knowing about Kona Coffee. I used any brand of instant coffee grinds. Now I add Kona Coffee grinds instead because my cookies taste so much yummier and more fragrant. The taste of Kona Coffee grinds is much better than any regular coffee grinds. I don’t use 100% Kona coffee, but a 10% Kona Coffee blend. I recommend using Kona Coffee because the taste of the cookies will be richer, and you can purchase Kona Coffee from this link if you can’t find it at your local grocery store. The brand I use is Hawaiian Isles Kona Coffee Vanilla Macadamia. If you want to go all out and use 100 % Kona coffee, go for it! Feel free to use regular coffee grinds.
INSTRUCTIONS
Let’s gets started on the Kona Coffee Cookies Recipe! This recipe will leave you thinking I don’t think I can make traditional chocolate chips anymore. I need to have those Kona Coffee Cookies !!!
The ingredients include flour, butter, dark chocolate chips, sugar, baking soda, salt, vanilla extract, brown sugar, egg and instant coffee grinds. I prefer dark chocolate chips because they are less sweet than milk chocolate. I’m not big on super sweet foods or desserts so I usually use less sugar in my recipes.
In a bowl, combine the butter, sugar, vanilla extract, brown sugar, egg and instant coffee grinds. Mix these ingredients together with a whisk or spoon
In a separate bowl, add in the flour, baking soda and salt.
Slowly add the flour mixture to the rest of the ingredients. Mix until it has a reached a dough-like consistency. Then add the chocolate chips.
Before placing the cookie dough on the pan, grease it with butter. Take a 1 tablespoon measuring spoon and scoop out the dough and use your finger to remove the dough from the spoon onto the baking pan. Place the cookies 2 inches apart. I had one large baking pan and a small baking pan so it took 2 rounds to bake all of the cookie dough. This recipe makes approximately 30 cookies.
Pre-heat the oven to 350 degrees Fahrenheit and bake for 14 minutes. Eat them while they are warm because you will feel the crunchiness on the outside and chewiness on the inside. You won’t be able to put these Kona Coffee Cookies down.

Ingredients
- 1 3/4 cup flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup butter
- 2 tsp Kona Coffee grinds or instant coffee grinds
- 1 cup dark chocolate chips
Instructions

In a bowl, combine the butter, dark, sugar, vanilla extract, brown sugar, egg and instant coffee grinds. Mix these ingredients together with a whisk or spoon.
