Adobong Baboy (Pork Adobo) Recipe
Adobong Baboy (Pork Adobo) is my favorite Filipino dish. For Filipinos and non-Filipinos alike, many are familiar with adobo. It is a Filipino comfort food and possibly the national food for Filipinos. The technique of cooking adobo involves simmering the meat in order to tenderize the meat and fuse together the flavors of the sauce. The meat stews in a sauce made of vinegar, soy sauce, water, bay leaves and peppercorn.
Although adobo is a native Filipino dish, the name adobo is Spanish in origin. The Spanish referred to this dish as adobo because the sauce was similar to the marinade that Spaniards used to preserve meat. The Spanish marinade consisted of paprika, oregano, salt, garlic and vinegar. So Spanish adobo refers to a sauce marinade and Filipino adobo refers to the method of cooking the meat.
I enjoy cooking pork adobo because of the subtle sour and salty taste. These flavors combine naturally to create an amazing flavor. The smell of adobo simmering in a pan is indescribable. And it fills you with warmth and goodness.
Directions for Adobong Baboy:
Heat up a pan with a teaspoon of cooking oil, and add the minced garlic. When the garlic becomes fragrant, add the meat and cook until it is brown.
After the meat browns, add the soy sauce, vinegar, bay leaves, 1/2 cup of water and peppercorn. Bring to a boil and let it boil for 5 minutes. Do not stir the sauce; boiling the sauce helps to burn off the vinegar taste.
After 5 minutes of boiling, lower the heat and bring it to a simmer for 45 minutes. After the 15 and 30 minute mark of simmering, add 1/2 cup of water each time. Every so often, taste the sauce to see if more water is needed to adjust the flavor. When your’e done cooking, serve the pork adobo on a plate with warm and steamy white rice!!

Ingredients
- 1 tsp cooking oil
- 1 pound pork shoulder
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 tsp peppercorn
- 3 bay leaves
- 5 garlic cloves minced
- 1.5 cup water
Instructions

Heat up a pan with a teaspoon of cooking oil and add the minced garlic. When the garlic becomes fragrant, add the pork. Cook the pork until it is browned.

Once the meat is cooked, add the soy sauce, vinegar, bay leaves, 1/2 cup water and peppercorn. Bring to a boil and let it boil for 5 minutes. Do not stir the sauce.

After 5 minutes of boiling, set on low heat and let it simmer for 45 minutes. After the 15 and 30 minute mark of simmering, add 1/2 cup of water each time. Every so often, check to see if more water is needed to adjust the flavor to your liking.
